Abstract
The authors sincerely regret an error in Fig. 4 that occurred due to technical aspects of figure assembly and typesetting. In the originally published Fig. 4, a technical oversight resulted in the unintentional duplication of certain regions in Fig. 4b and e. It is essential to clarify that both panels were intended to display the microstructure of the surimi gel before the freezing treatment. Consequently, this error does not affect the validity of the data presented in Fig. 4 or the overall scientific conclusions of the article concerning the discussion on cryoprotection. To address this, we reviewed the original experimental data and selected the appropriate SEM images of the corresponding samples that more accurately reflect our findings, replacing the regions in Fig. 4b and e. To ensure the integrity of the scientific record, issuing a corrigendum to correct this figure is essential. The updated version of Fig. 4 is attached in the corrigendum. These corrections do not alter the scientific significance or conclusions of the article. The authors would like to apologise for any inconvenience caused.
